For the first time, we’re welcoming Jamie Pickles, chef and co-owner of Manchester restaurants Stow and The Trof, to Millington Hall Farm for a one-off class exploring what happens when live-fire cooking meets restaurant-level technique.
Jamie’s journey has taken him from his Peak District roots in Bakewell through professional kitchens including the Devonshire Arms on the Chatsworth Estate and Saint Francis Provisions in Kinsale, before returning to Manchester and creating his own distinctive style of cooking.
At Stow, Jamie has built a restaurant around a brilliantly simple philosophy: start with exceptional produce, respect the seasons and use fire to make it taste incredible. The restaurant cooks over solid fuel, with its regularly changing menu built around carefully sourced meat, fish and vegetables.
Now Jamie is bringing that approach to Millington Hall Farm.
This will be far more than simply watching a chef cook. Jamie will demonstrate how fire, smoke, temperature and great ingredients can be treated with the same precision as any other fine-dining technique, while sharing the ideas and experiences that have shaped his cooking along the way.
Guests will get up close to the fire, learn the techniques behind the dishes and, of course, eat everything Jamie creates throughout the class.
During the experience you'll:
- Learn to cook with fire, not just over it — Jamie will explore fire management, heat, smoke and how different techniques can completely change an ingredient.
- Turn outstanding produce into restaurant-quality food — working with carefully selected seasonal meat, fish and vegetables and learning why the ingredient should dictate the dish, rather than the other way around.
- Learn the thinking behind the cooking — preparation, seasoning, timing, resting, finishing and the small decisions that take a dish from good to exceptional.
- Cook, learn and eat with Jamie — an intimate, hands-on class with plenty of opportunity to ask questions, understand his approach and enjoy a menu created specifically around the experience.
Jamie’s cooking demonstrates that live fire doesn't have to mean traditional BBQ. In the right hands, it can be precise, refined and capable of producing exceptional restaurant food.
