The full experience
Game & Flame is a practical introduction to wild game and the traditions that surround it, following the journey from field and whole animal through to butchery, fire and the table.
We’ll begin with British game and its place in the countryside, discussing hunting, seasonality and responsible game management, how animals move from field into the food chain, and what to look for when sourcing game yourself. It’s an opportunity to understand where your food has come from and the realities and traditions behind eating truly wild meat.
At the butcher’s block, you’ll watch the skinning and breakdown of roe deer alongside the preparation of whole pheasant. Our team will explain the different cuts, how to make use of the whole animal and the practical preparation techniques that have long been part of hunting and rural life.
From there, we move outside to cook over wood and charcoal. Drawing on simple, traditional ways of cooking in the field, we’ll work with flame, embers, grills and suspended cooking, matching different cuts to the fire and using smoke, seasoning and simple accompaniments to let the game speak for itself.
You’ll get hands-on throughout, helping to prepare and cook the game before gathering around the table to eat what has been produced.
It’s a class rooted in the countryside: understanding the animal, respecting the harvest, using what you have and turning wild British game into exceptional food over fire.
