Marcus Bawdon comes to the north...
This class is designed for anyone looking to get into real BBQ and build the confidence to cook great food outdoors. Marcus will take you through the fundamentals of controlling heat, understanding different fuels and choosing the right combination of smoke, fuel and food to get the best results.
You’ll learn how to set up your BBQ for both direct and indirect cooking, how to manage airflow and temperature, and how to use smoke to add flavour without overpowering the food. You’ll also learn how to make your own dry rub, when to apply it, and when a sauce or baste should be introduced to get the best flavour and finish.
Throughout the session, you’ll get hands-on with a selection of simple but seriously good BBQ dishes, including chicken thighs, steaks and roasts, learning techniques that you can easily recreate at home. The focus is on understanding the principles behind great BBQ, so you can adapt them to whatever grill, smoker or fuel you have.
The atmosphere is relaxed, informal and sociable, with plenty of opportunity to ask questions and pick Marcus's brains. By the end of the session, you’ll have a better understanding of fire, fuel, heat and smoke, along with a host of new techniques and ideas to inspire your own outdoor cooking.
The class includes three hours of teaching and hands-on cooking, followed by an hour to sit down, enjoy the food you’ve cooked, chat with the group and ask any final questions.
No previous BBQ experience is required — just come hungry and ready to learn.
