Cook Christmas dinner on the Big Green Egg with confidence.

Learn turkey, rib of beef, festive sides, fire management and timing in one hands-on seasonal class.

Designed for Big Green Egg owners and kamado cooks, this hands-on seasonal class focuses on the practical skills needed to plan and cook Christmas dinner outdoors.

You’ll prepare and cook a range of festive dishes while learning how to manage heat, organise timings, use smoke appropriately and bring the whole meal together without relying on the kitchen oven for everything.

Whether you’re hosting Christmas Day, Boxing Day or simply want to get more from your Egg over the festive season, this class is designed to give you useful techniques you can take home and use straight away.

You don’t need to be an expert, but some familiarity with your Egg or kamado will help you get the most from the session.

What You’ll Learn

Christmas Turkey

You’ll learn how to prepare, season and cook a turkey on the Big Green Egg, with a focus on even cooking, crisp skin and properly rested meat.

We’ll cover:

  • Choosing and preparing the bird
  • Brining and seasoning
  • Heat and airflow management
  • Internal temperatures
  • Resting and carving
Rib of Beef

You’ll also work with a rib of beef and learn how to cook it using a reverse-sear approach.

We’ll cover:

  • Selecting and preparing the joint
  • Seasoning
  • Indirect cooking
  • Searing
  • Resting and carving
Festive Sides

Alongside the main cuts, you’ll prepare a selection of Christmas sides and accompaniments.

These may include:

  • Pigs in blankets
  • Roast potatoes
  • Glazed carrots
  • Sprouts with bacon
  • Roasted squash
  • Stuffing
  • Cranberry accompaniments
  • Gravy and sauces

The exact menu may vary, but the focus is on dishes that can be reproduced at home.

Timing the Meal

One of the hardest parts of Christmas dinner is getting everything ready together.

We’ll show you how to work backwards from serving time, taking preparation, cooking and resting into account so the meal is easier to manage.

You’ll also learn which dishes can be cooked ahead, held or finished at the last minute.

Fire Management

Cooking a full festive meal requires more than simply setting one temperature.

We’ll look at:

  • Building a stable fire
  • Managing airflow
  • Holding temperatures over longer cooks
  • Adjusting heat during the session
  • Cooking several dishes on the same Egg
  • Making the best use of direct and indirect heat
Smoke & Seasonal Flavour

Smoke should support the food rather than dominate it.

We’ll discuss suitable woods, herbs, spices and seasoning combinations for Christmas cooking, and when smoke adds something useful to a dish.

The Food

At the end of the session, we’ll sit down together to enjoy the dishes prepared during the class.

Meet your chef

Steve Crowe is the Head Tutor and Events Manager at Millington Hall Farm, where he brings together a passion for BBQ, live-fire cooking and great food with a practical, hands-on approach to teaching.

With a particular focus on cooking over fire, charcoal and wood, Steve teaches everything from Big Green Egg and kamado cooking to longer BBQ cooks, grilling and live-fire techniques. His classes are built around real-world cooking, helping people understand their equipment, manage their fire and temperature, and produce great food with confidence.
