Led by our expert team of meat professionals, your day blends learning, cooking, and eating in equal measure. With guided sessions from our butcher on pig butchery and sausage-making, our pitmaster on BBQ seasoning and open-flame cooking, and a steady flow of freshly prepared, locally sourced food from our head chef, you’ll experience it all.

And the best part? You won’t just watch – you’ll get stuck in: breaking down your own pig joints, preparing cuts and grill classics, and crafting sausages to take home.

  • Butchery Demonstration – Watch our master butchery fully breakdown half a pig and learn how to prepare joints and cuts.
  • BBQ Cooking Class – Join our pitmaster and master live-fire cooking, tasting meats fresh from the flames while learning BBQ methods, heat control, and the art of the grill.
  • Sausage Making Experience – Create your own sausages to take home, guided step by step by our host.

Your experience begins in the main tent with a relaxed meet & greet, a welcome drink in hand, and the chance to chat with the expert tutors who’ll guide you through the day
Underground Pit Cooking
Head down to our ground pit fire and step back in time to discover the ancient art and timeless basics of underground cooking.
Intro to Live Fire Cooking
Meet your pitmaster for the day, enjoy the first of food live from the fire, learn the anatomy of a BBQ and the art of heat control.
Butchery Demo
Our master butcher gives you an in depth guide to butchery with a live demonstration of the butchery of a full half pig.
Charcuterie Tasting
Enjoy a journey of flavour with a selection of delicious cured meats from our local charcutière.
BBQ Session 2
In the second cooking session it's over to you to help the pitmaster prepare and cook what you will be eating in the final feast.
Sausage Making Competition
Get stuck in with a guided sausage-making session at the bench, one sausage to rule them all.
Nordic Tipi Feast
Enjoy the fruits of today's labour and join your tutors and coursemates at the Nordic Tipi long table feast!
