Event Description
Millington Hall Farm is excited to welcome barbecuing enthusiasts to this 4 hour immersive grilling experience, set in a unique location in the idyllic Cheshire countryside. Our expert butchers/chefs take you through butchery, seasoning, sausage-making and open-fire grilling from the Wild Meadow prep kitchen and grill tipi. All this is topped off with a long-table Nordic Tipi feast!
You’ll get to try your hand at all the skills on show, and compete to be crowned as the king or queen sausage-maker! You’ll grill your butchered & seasoned cuts and sausages at the open-fire – before taking a seat in the Nordic Tipi to dine with your course mates and teachers.
Your 4 hour experience includes a welcome beer, charcuterie snacks and all the food at the celebratory feast! The feast includes all the meat you prep & grill on the day, along with special sides and additional cuts, slow-cooked by our chef.
A perfect gift for a fan of barbecuing, and a brilliant way to support local producers. All the meat and beverages for this event come from farms or breweries within a 10 mile radius of our Cheshire farm.
What's Included in the Experience?
1. Introduction
15-20 mins
“Meat the Grill”
Begin your WILD GRILL experience with a 10-15 minute relaxed meet and greet with your tutors for the day.
Soak up the views of our 26 acre farm whilst enjoying your first charcuterie board and your pick of local welcome drinks from breweries only miles away from us.
Our bar is also open for the duration of your experience if your wanting other drinks
We normally have 2-3 tutors, a master butcher, chef and local farmer.

2. Butchery Session One
30-40 mins
Where is the meat from
We will go over the separate meats that are being cooked today including where they have come from and the heritage of the farmed animals, the husbandry involved and how the game birds are sourced.
Our normal selection of meats are:
Pig, Beef, Venison, Chicken, Goat, Lamb, Pheasant, Duck, Turkey, Wood Pigeon
(These are subject to change due to shooting seasons, seasonality and local availability).
Butchery Demonstration
After this our Master Butcher will do a full demonstration of the butchery of half a pig and the separate cuts that can be obtained.
3. Light The Fires
10-15 mins
See the 5 separate cooking methods we will be using.
Our chef will go over the different cooking methods that we are going to be using, the fuel used and the best way of setting each fire.
Given the long cook time, some fires will have already been started and you can see how we maintain a constant temperature.
Open Fire
For larger cuts of meat cooking on a spit/swords above a controlled open fire.
BBQ Grill
It’s your standard BBQ, but not as we know it Jim.
A bespoke made 1.5m diameter nonagon shaped chain hung grill, this is an extremely useful device for cooking on mass.
Smoker
Our BIG DADDY smoker, weighing in at nearly 1t and only movable by a 4×4, this is our gentle beast.
Pit
A speciality cook, using hot coals in the ground cooking this way is both an art and a science. We will cover the basics of this and see what’s already been started.
KAMADO (Ceramic EGG)
Long cooks at controlled temperatures, a must for any BBQ aficionado.
4. Butchery Session Two

Over to you
Back to your station in the prep tent, now it’s your turn.
Our butcher will demonstrate how to trim down a larger joint into the cut that you will be using today, everyone will have their own slab of meat to prepare, with tutors on hand to go over any questions.
This is also a good place to pick up some additional knife skills.
5. Intro Into Seasoning

The Ultimate Season Station
Getting the perfect flavour
Head over to our extensive Season Station, our chef will go over all the ingredients available and the separate attributes they bring to different meats, but then it’s up to you to decide what flavours you want.
Interval
A Well Deserved Break
After all that you must be hungry, time to enjoy some freshly prepared meat treats by our chef!
A selection of the more unusual cuts as well as old time favourites. Our cash bar is also open if your wanting to have something additionally with it.
6. Hands On Sausage Making

Compete for the best sausage!
No professional BBQ is complete without the masterful flavours of the humble sausage.
Everyone who attends the Wild Grill gets to hand make their own sausages. After a short demonstration by our butcher, head over to our season station and grab the key ingredients you want in your unique handmade sausages.
You’ll get to make a minimum of at least 3 foot of sausages, so lots to take home too.
7. The Cook
30-45 mins
